La Plancha (The Grill) de Eldorado opened July 1, 2010,and is owned and run by Juan Carlos Pineda and his family (Lidia, Juan Carlos Jr., and Tatiana). Head chef Pineda has worked in several restaurants before deciding to open his own. Chef Pineda has over 25 years of experience. He wanted to bring some Latin flavor with traditional New Mexican foods to Santa Fe.
Throughout his years of working as a chef, chef Pineda has gained a wide variety of creative ideas and twists on classic dishes such as the Latin Paella. Chef Pineda has his own special blend of green rice which consists of spinach, green onion, and cilantro.
